Cook the lentils. Add 1 1/2 cups water and lentils to a pot and simmer for 20 minutes.
Press the tofu in a tofu press, or slice it and place between two cutting boards and two dish towels. Place a heavy pot on top and wait for 10 minutes.
Combine cooked lentils, pressed tofu, and all other filling ingredients into a food processor. Process until combined.
Heat each tortilla on a skillet.
Add about 2 tablespoons of filling, half a slice of cheese sliced as a triangle, then close the taco and secure with a toothpick.
Spray each side of the taco with olive oil.
For the air fryer, place a rack in the tray and stack up to 10 tacos so they are staying up straight. Air fry on 370 for 10 minutes.
For the oven, Lay the tacos on a cookie sheet and broil at 450 degrees for a couple minutes on each side. Keep checking every minute to make sure the tacos are not burnt.
