Ingredients

unsweetened vanilla coconut yogurt

baking soda

flax eggs (2flax meal and 6 tbs water
mixed and refrigerated for 15 minutes)

stick vegan butter
or 1/2plain applesauce

cup
cane sugar

cup
coconut sugar

cups
whole wheat pastry flour

overripe bananas
mashed
3/4

chocolate chips (optionals
chopped walnuts would be good too)
pinch
of salt

vanilla
Instructions
Preheat oven to 350 degrees.
Make flax egg and refrigerate.
Mix yogurt and baking soda and let sit for 10 minutes.
Cream butter (or applesauce) and sugars together.
Add flax egg and mix, then flour and yogurt mixture alternately.
Add vanilla and salt.
Mix in bananas and chocolate chips.
Pour in a lightly greased muffin tin and bake for 30 minutes.
