Ingredients
- 4 tbsp unsweetened vanilla coconut yogurt
- 1 tsp baking soda
- 2 tbsp flax eggs (2flax meal and 6 tbs water mixed and refrigerated for 15 minutes)
- 1 cup stick vegan butter or 1/2plain applesauce
- 1/2 cup cane sugar
- 1/2 cup coconut sugar
- 1 1/2 cups whole wheat pastry flour
- 3 overripe bananas mashed
- 3/4 cups chocolate chips (optionals chopped walnuts would be good too)
- pinch of salt
- 1 tsp vanilla

Instructions
- Preheat oven to 350 degrees.
- Make flax egg and refrigerate.
- Mix yogurt and baking soda and let sit for 10 minutes.
- Cream butter (or applesauce) and sugars together.
- Add flax egg and mix, then flour and yogurt mixture alternately.
- Add vanilla and salt.
- Mix in bananas and chocolate chips.
- Pour in a lightly greased muffin tin and bake for 30 minutes.
