Ingredients
Muffins:

whole wheat pastry flour

coconut sugar

flax eggs
(2 tbsp flax meal mixed with 6 tbsp water sit for 15 minutes)

soy milk
(or any plant based milk)

vanilla extract

plain applesauce

diced apples
Crumble on top:
2/3
cup
whole wheat pastry flour
2 1/2
tbsp
coconut sugar
2 1/2
tbsp
granulated sugar
1/2
tsp
salt
1/2
tsp
cinnamon
1/4
cup
vegan butter
Instructions
Mix together flour, baking powder, salt, cinnamon.
In another bowl mix together the flax eggs, coconut sugar, soy milk, vanilla and applesauce.
Combine and mix the wet ingredients with the dry ingredients.
Add apples and stir.
Spoon mixture into a greased or lined muffin tin.
Mix the crumble ingredients together until they are combines. You can use a fork, your fingers, or a food processor.
Spoon a tbsp of the crumble on top of each muffin.
Bake at 425 for 15 minutes. Muffins are done when they are golden on top.
