Ingredients
Muffins:
- 1 3/4 cups whole wheat pastry flour
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 2/3 cup coconut sugar
- 2 tbsp flax eggs (2 tbsp flax meal mixed with 6 tbsp water sit for 15 minutes)
- 1 cup soy milk (or any plant based milk)
- 1 tsp vanilla extract
- 6 tbsp plain applesauce
- 2 cups diced apples
Crumble on top:
- 2/3 cup whole wheat pastry flour
- 2 1/2 tbsp coconut sugar
- 2 1/2 tbsp granulated sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 cup vegan butter

Instructions
- Mix together flour, baking powder, salt, cinnamon.
- In another bowl mix together the flax eggs, coconut sugar, soy milk, vanilla and applesauce.
- Combine and mix the wet ingredients with the dry ingredients.
- Add apples and stir.
- Spoon mixture into a greased or lined muffin tin.
- Mix the crumble ingredients together until they are combines. You can use a fork, your fingers, or a food processor.
- Spoon a tbsp of the crumble on top of each muffin.
- Bake at 425 for 15 minutes. Muffins are done when they are golden on top.
